Oscar & Francisca Chacón who own and operate Las Lajas in Costa Rica have been at least partially responsible for converting the average coffee consumer to specialty for over two decades now. Their contribution to innovation around both natural and honey processed coffee cannot be overstated, and the impact has helped to improve quality of similarly processed coffees globally.

Their careful attention to detail result in consistently sweet, bright, and clean coffees that retain a level of vibrancy that can be lost without care while producing coffees that were fermented/dried with all or some of the fruit still attached to the seed. They are third generation farmers, who turned their eye to innovation around 2005, and the rest is history. It's always a good day when we get to drink something like this, and we think you'll feel the same :)

Why is this coffee special?

With the four of us spending a significant amount of time in the specialty coffee industry, there's just something that speaks to our soul when drinking coffees from Las Lajas. Their coffees have long been used in the competitive barista scene, and for good reason.

This coffee, along with nearly every lot we've tasted from these folks, is a flavor bomb. Unmistakable - you wouldn't be able to hand this to your average coffee drinker and have them tell you it 'just tastes like coffee'. If you're looking for something to melt the mind of someone newer or interested in third-wave coffee, look no further.
